Vegetarian Couscous

In 2006, the cous cous ranked second among the favorite dishes of the French. If it is very appreciated in the world, it is mainly because of its benefits for our health.

According to Chef Guy Dongué, the cous cous is a very balanced dish.

The semolina that composes it is rich in B vitamins, magnesium and phosphorus. It is an important source of energy. Combined with fresh vegetables, dried fruits, fish or meat which are excellent sources of protein for our body, cous cous remains an excellent meal for our health.

How to prepare the Vegetarian Couscous? Here are the different steps that Chef Guy Dongué has prepared for you.

Ingredients

Adjust Servings
250ml couscous mix
250ml water or chicken broth
4 Granny apples (green) Peeled and cored
2 very firm tomatoes (preferably green) *Pole and seeded
2 lemon or lime
45ml olive oil
1 diced green pepper
1/2 bunch of fresh coriander
1/2 bunch of Italian parsley
1/2 bunch of fresh mint
2 green onion sprigs
Salt and pepper in QS (sufficient quantity)

Directions

Step 1
Rinse all the ingredients under cold water. Bring the water or chicken broth to a boil in a medium saucepan add the couscous and let the water come back to a boil.

2nd step
Cover the couscous and remove the pan from the heat, let stand 8 minutes and stir gently with a fork to separate the seeds.

Step 3
Regularly dice the apples, tomatoes, lemon segments, all in a salad bowl, add the couscous, olive oil, lemon juice, season and mix well without crushing them.

Step 4
Dry and chop all the herbs and add to the preparation then mix. Serve as fresh.

Notes

*Monder: Consists of removing the skin or envelope of a food. For example, to skin a tomato, you just have to dip it for a few seconds in boiling water, so you can remove its skin very easily.
